This apple cider chicken marinade makes delicious sweet and savory chicken breast. Its dominant flavor comes from apple cider and maple syrup and the sweetness is balanced by adobo sauce and Dijon mustard.

Marinade ingredients and notes:
- Rather than using straight vinegar to balance the sweetness in this marinade, I used adobo sauce. Adobo sauce is made with vinegar, so it contributes the required acidity, but it also adds a hint of smoki- and spiciness. That makes the overall flavor of the chicken much more interesting and complex.
- Please note that this recipe calls for apple cider (unfiltered apple juice), not apple cider vinegar.

Apple Cider Chicken Marinade
This apple cider chicken marinade adds a delicious sweet and savory flavor to chicken breast.

Equipment:

Ingredients:
- ⅓ cup apple cider (unfiltered apple juice, not apple cider vinegar)
- ½ teaspoon Dijon mustard
- 1 teaspoon adobo sauce (from a can of chipotle peppers in adobo sauce)
- ¼ teaspoon table salt
- ½ tablespoon maple syrup
- 1 teaspoon vegetable oil or mild olive oil
- 8 ounces boneless, skinless chicken breast
Instructions:
- Add apple cider, Dijon, adobo sauce, salt, maple syrup and oil to a bowl.
- Whisk until combined.
- Pound the chicken breast into an even thickness. Add the chicken to the marinade, cover and transfer to the fridge. Marinate for 30 minutes, then grill or sear.
