This flourless Parmesan cream sauce is delicious with pasta or on chicken or salmon. Rather than sauteing fresh garlic, I used roasted granulated garlic in this recipe. The lightly sweet roasted garlic flavor makes an incredible pairing for the nutty flavor of the Parmesan.
My ingredient notes:
Roasted granulated garlic (which is roasted garlic that has been dried and ground) is available in most spice shops. It's a fantastic ingredient for sauces; I also used it in this garlic white pizza sauce and in this tomato dipping sauce.

Parmesan Cream Sauce (no flour)
This flourless Parmesan cream sauce is full of umami and delicious on pasta or with chicken or salmon. Makes about ¾ cup of sauce.

Equipment:

Ingredients:
- 1 cup heavy cream
- ¾ teaspoon grated nutmeg
- ½ teaspoon roasted granulated garlic
- ⅛ teaspoon table salt, more to taste
- ½ ounce finely grated Parmesan (about ¼ cup packed)
Instructions:
- Add cream, nutmeg, roasted granulated garlic and salt to a pan. Bring to a simmer, stirring continuously.
- Simmer until the sauce starts to thicken (about 2 minutes), then take off the heat. Stir in the Parmesan. Taste the sauce and season with a touch more salt, if desired.
Notes:
Storage: Store this sauce in an airtight container in the fridge for up to 5 days. Gently reheat on the stovetop or in the microwave.
