This easy curry rub for chicken breast is a simple but very delicious spice mix. It's made with yellow curry powder, chili powder, cumin, allspice, garlic powder and salt.

Ingredient notes:
- In addition to yellow curry powder, I added an almost equal amount of chili powder to this spice mix. The chili powder balances the strong flavor of the curry and keeps the blend from being one-dimensional.
- Both yellow curry powder and chili powder are usually available in different levels of spiciness. That means you can choose whether you want this mix to be mild, medium or hot.

Curry Rub for Chicken Breast
Makes about 6 ½ tablespoons of dry rub. Use 4 teaspoons per 8 ounces of chicken breast. This rub is great on both skinless and skin-on chicken breast.

Equipment:

- bowl or jar
Ingredients:
- 2 ½ tablespoons yellow curry powder
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoon salt
- ¾ teaspoon ground allspice
Instructions:
- Add all ingredients to a bowl or jar and mix together until well combined.
- Store this mix in an airtight container in the kitchen pantry. It will keep for at least six months.
Notes:
How to use it: Pat chicken breast dry using paper towels, then rub with a little bit of vegetable oil. Sprinkle the dry rub on, then bake or grill the chicken.
