This Italian dry rub for chicken is made with herbs found in classic Italian seasoning along with garlic powder, salt and sumac. What makes the rub special is the sumac. It adds a citrusy umami flavor that works great with chicken and provides the needed contrast for the herbs. Without the sumac, the herb flavor would be overpowering.

This dry rub is great on chicken breast, chicken thighs or any other cut of chicken (skinless and skin-on).

Italian Dry Rub for Chicken
Makes about 2 ½ tablespoons. I recommend to use about 1 tablespoon per 8 ounces of chicken.

- Add all ingredients to a bowl and mix until well combined.
- Store in an airtight container in a dark, cool and dry place. The seasoning will keep for at least 6 months.

How to use it:
Pat chicken dry using paper towels. Rub with a little bit of oil, then sprinkle with the dry rub. Grill or bake the chicken as usual.
