This flavorful Mediterranean spice rub for chicken is a mix of aromatic spices and herbs commonly used in Mediterranean cuisine. It takes boneless, skinless chicken breast from ordinary to gourmet!

Recipe ingredients:
I focused this recipe on spices often used in eastern Mediterranean cuisine, such as cumin and allspice. Those make up the dominant flavors and give this spice rub a fresh, earthy and lightly citrusy flavor. It's a different flavor profile from that of central or western Mediterranean blends that can include rosemary, paprika and more.
