This dill honey mustard sauce is made with fresh dill, honey, Dijon mustard, rice vinegar, black pepper, red onion and olive oil. It has a mild sweetness that is balanced by acidity from the vinegar and sharpness from the mustard and the onion. It's similar to a dressing and makes a great condiment for crab cakes and fish cakes.

Recipe ingredients and notes:

  • Rice vinegar works great in this recipe because it has a nice acidity but is not as harsh as some other vinegars.
  • Diced red onion not only adds sharpness and flavor to this sauce, it also adds great texture.
  • Fresh dill is a must for this recipe and I don't recommend substituting dried dill weed. The flavor of dried dill is quite different from that of the fresh herb and simply doesn't work in this sauce.
