This dill honey mustard sauce is made with fresh dill, honey, Dijon mustard, rice vinegar, black pepper, red onion and olive oil. It has a mild sweetness that is balanced by acidity from the vinegar and sharpness from the mustard and the onion. It's similar to a salad dressing and makes a great condiment for salmon sandwiches, crab cakes and and other seafood cakes.
Recipe ingredients and notes:
- Rice vinegar works great in this recipe because it has a nice acidity but is not as harsh as some other vinegars.
- Diced red onion not only adds sharpness and flavor to this sauce, it also adds great texture.
- Fresh dill is a must for this recipe and I don't recommend substituting dried dill weed. The flavor of dried dill is quite different from that of the fresh herb and simply doesn't work in this sauce.

Dill Honey Mustard Sauce

- Add mustard, honey, rice vinegar, red onion, dill and black pepper to a bowl.
- Whisk together until smooth.
- Whisking continuously, slowly drizzle in the olive oil until you have a smooth sauce.* Refrigerate until ready to serve.
Recipe notes:
*Note that this sauce is fairly loose. If you would like it thicker, whisk in a little more Dijon mustard.
