Fennel Spice Rub

This gourmet fennel spice rub is made with ground fennel seeds, smoked hot paprika, onion powder and salt. The combination of fennel and paprika is delicious and makes this dry rub truly special. It's great on pork chops and vegetables, particularly carrots and potatoes.

Note that this dry rub has a prominent fennel flavor. For a rub where fennel adds a much more subtle background flavor, check out this pork belly rub.

Fennel Spice Rub

Makes about 5 ½ teaspoons, which is enough for 4 thick-cut boneless pork chops (with each chop weighing about 6 ½ ounces).

Equipment:

  • measuring spoons
  • mixing bowl

Ingredients:
  

  • 2 teaspoons ground fennel seeds
  • 2 teaspoons smoked hot paprika
  • 1 teaspoon onion powder
  • ½ teaspoon salt

Method:
 

  1. Add all ingredients to a bowl and stir until well combined.
  2. Store in an airtight container in a cool, dark and dry place, such as the kitchen pantry. The rub will keep for at least 6 months.

    The question about the pork loin was supposed to be about sou vide. Autocorrect?
