This vinaigrette is flavored with ground cumin, dried oregano and onion powder, in addition to the standard ingredients (red wine vinegar, olive oil, garlic, Dijon mustard and salt). It has an intense acidic bite and a delicious, complex flavor from the spices and the herb. Because of its sharp flavor, this vinaigrette is great not just as a salad dressing but also as a condiment for grilled meats. I've used it on grilled shrimp, grilled chicken thighs and steak, and I loved it on all of these!
Vinaigrette ingredients:
I played around with the oil-to-vinegar-to-Dijon ratio in this recipe quite a bit before I thought it was just right. The vinaigrette is quite sharp and very intensely acidic, which makes it especially good for grilled meats that have a high fat content.
