  • 1/2 pound bacon, diced
  • 1 celery rib, diced
  • 1 small onion, diced
  • 1 large jalapeño, seeded and chopped
  • 2 large garlic cloves, minced
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon Hungarian paprika
  • 1 bottle lager or pilsner beer, 12 ounces
  • 2.25 cup chicken broth
  • 4 tablespoons unsalted butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 1/2 pound sharp cheddar, shredded
  • 4 ounces smoked cheddar, shredded
