Shrimp Lettuce Cups

I’ve got some super shrimp lettuce cup appetizers today. These guys are bursting with intense flavor and have great crunch.

Very easy to make, too. For the sauce and the marinade I stuck with the more mundane Asian-style ingredients, such as sake, soy sauce, ginger, garlic and sesame oil. Many recipes use oyster and hoisin sauce but those two have always had a slightly artificial taste to me that I never got entirely comfortable with.

Shrimp Lettuce Cups

An easy recipe for super flavorful and crunchy shrimp lettuce cups.

Ingredients:

  • a little bit of vegetable oil for frying
  • 4 large lettuce leaves
  • 17 medium-sized shrimp, cut into 1-inch pieces
  • 1 celery stalk, diced
  • 6 shiitake mushrooms, sliced
  • 1 teaspoon diced chili pepper
  • 1 green onion, sliced

For the marinade:

  • 1 teaspoon corn starch
  • 1 teaspoon sesame oil
  • 1 teaspoon sake
  • 1 teaspoon soy sauce

For the sauce:

  • 2 tablespoons sake
  • 4 teaspoons soy sauce
  • 1 garlic clove, minced
  • 1/4 teaspoon freshly grated ginger
  • 1/8 teaspoon sesame oil
  • 1/4 teaspoon sesame seeds
  • 1/2 teaspoon corn starch

Instructions:

For the marinade:

  • Whisk all marinade ingredients together in a bowl, add the shrimp to it and put in the fridge for 15 minutes.

For the sauce:

  • Whisk all sauce ingredients together in a bowl and set aside.

Put it all together:

  • Heat a little bit of vegetable oil in a pan on high heat until the oil starts to shimmer.
  • Add the shrimp to the pan and stir fry until cooked through.
  • Transfer the shrimp into a clean bowl and set aside.
  • Add more oil to the pan and stir fry the vegetables on high heat until tender and slightly browned on the edges.
  • Add the shrimp back to the pan with the vegetables, then add the sauce.
  • Bring to a boil, let the sauce thicken and turn translucent, then turn the heat off.
  • Spoon the filling into the lettuce leaves and serve.
