As you know, I find it hard to resist salted caramel anything so when I ran across this recipe I had to try it. It turned out as delicious as it sounds: caramel whisked with milk, cream and vanilla, then mixed into egg yolks, embellished with a hint of milk chocolate and baked until thick and creamy. I followed the recipe closely but reduced the amount of sugar a little bit and didn’t add salt to the custard, instead I just sprinkled it on because I prefer to only occasionally get a little taste of salt. Enjoy!

  • 2 cups heavy cream
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 3/4 cup + 1 tablespoon granulated sugar
  • 1/4 cup water
  • 1 ounce milk chocolate, finely chopped*
  • 6 egg yolks
  • fleur de sel for sprinkling



*Don't use chocolate morsels; morsels have stabilizers in them that actually prevent them from melting.

    Salted caramel is one of my favorite and having it as a dessert is one of the things I look forward too. Love your photos. The sea salt adds great texture! Which brand of the salt did you use?

    Am loving this shot Nicole, beautiful. The unctuous, dreamy caramel looks so delicious. The fleur de sel on top is perfect. I know that my popcorn I have next to me as I read blogs tonight just doesn’t quite fit the need that your pots de creme would!

    Reading this post has made me realise that I’ve NEVER made pots de creme before … why, oh why?
    These kinds of dessert of my favourite for entertaining, though. Relatively simple to make but they look sooo impressive. And salted caramel? Well, you can’t really go wrong with that flavour, can you?
    Absolutely love your photos … but that goes without saying, really …

    I’ve never made pots de creme but salted caramel is one of my fave flavours for ANYTHING so I’ll be trying this, maybe even today for my date!! ;) Will let you know if it impresses!
