You can use ginger fresh, dried or crystallized. (Crystallized ginger is basically ginger in candy form. It's made by boiling fresh ginger root in sugar syrup and then letting it dry. That way all the intense ginger flavor is preserved but it's wrapped in a blanket of sweetness.)
