What is chai spice made of?
Chai spice is a blend of different spices that usually includes cinnamon, ginger, cardamom and clove. A few other spices of choice, such as black pepper or fennel seeds, are often mixed in as well. The word chai simply means tea and what is usually called chai here in the U.S. is actually masala chai, a.k.a. spiced tea. The spices that are used in masala chai make up the chai spice blend.
Chai spice is perfect for fall and winter baking and adds great flavor to cakes, custards and tarts. Try it in this chai-spiced rum raisin bundt cake or this apple tart with chai-spiced custard sauce.
You can also use the blend to flavor heavy cream and then use it to make a Holiday chai white Russian cocktail.
