What’s in ginger Sriracha aioli?

Traditional aioli is an emulsion of just olive oil and garlic. Nowadays, however, the term aioli includes flavored garlic mayonnaise sauces, such as the one in this recipe.

The aioli here is made with mayonnaise, garlic, grated fresh ginger and Sriracha sauce.

Garlic, mayonnaise, fresh ginger and Sriracha sauce on a table.

Can I substitute ground ginger?

I don’t recommend substituting ground ginger in this recipe. The zing of fresh ginger root is an important flavor component in this aioli.

(You only need ¼ teaspoon of grated ginger for this recipe. If you have fresh ginger root left, use it to make these sweet and spicy shrimp or this Asian noodle salad!)

How to make it:

Step 1. Finely grate the ginger root and mince or press the garlic clove.

Grated fresh ginger root and pressed garlic in bowls.

Step 2. Add ginger, garlic, mayonnaise and Sriracha to a bowl and whisk until smooth.

How to store it:

Store the aioli in an airtight container in the fridge until you’re ready to serve it.

How to serve it:

Serve this aioli as a dipping sauce for French fries or for cooked seafood, like shrimp and fish sticks.

How spicy is this aioli?

This aioli is very spicy!
