It occurred to me the other day that I actually don’t know what all is in the blend known as pumpkin pie spice. The jar in my cupboard lists “spices” as ingredients. Thank you very much for that exhaustive info, Spice Islands. :-)
Luckily the internet was less secretive and now I know that I’ve got a mix of cinnamon, mace, nutmeg, ginger, clove and allspice in my hands. (Mace, by the way, is the skin that covers the nutmeg).
A few million recipes use pumpkin pie spice in combination with, you know, pumpkin, so I decided to experiment with something different. My trusty Flavor Bible listed an interesting pairing suggestion that all six spices had in common: chicken. Recipe coming soon!
